
The Saltimbocca are a roman typical dish, with meat, ham and….
Ingredients for 4 persons:
400 gr. bovine meat (8 slices),
40 gr. butter, 16 sage’s leaves,
120 gr. raw ham,
pepper, salt.
Preparation:
First of all, eliminate from the meat nervous and possible fat parts.
Then, put on every bovine slice one of ham.
After having washed and dried it, fix a leaf of sage on every slice of meat and ham with a toothpick. In a frying pan, heat 30 grams of butter and add the meat.
Salt, pepper and cook one minute for each side.
When the meat will be cooked, take off from the frying pan and hold warm.
Meanwhile, add the butter remained with a spoon of water and tighten the sauce.
Then serve the saltimbocca pouring above the prepared warm sauce.
Among the versions of the recipe, also those that demands to flour the meat before to cook it.
