Typical roman dish, very simple to cook and very appreciated by children.
Ingredients for 4 persons:
250 gr. semolino,
1 liter milk,
120 gr. butter,
50 gr. Grana cheese,
1 spoon grated Gruyere.
Preparation:
Pour the milk in a little pot with butter and a pinch of salt.
When milk boils, pour the semolino quickly mixing for not forming clots.
After 30 minutes of cooking, remove it from the fire, incorporated a spoon of grated Grana cheese and mixing until it will be loose.
Move the semolino to a wide-low baking-pan, and level the surface forming a middle centimetre layer.
Once cooled, make a lot of round disks with a stencil or a glass.
Put the gnocchi slightly overlapped in a buttered heat-resistant pan and cook in warm oven at 200°, dusting with other butter and grated gruyere.
After 15-20 minutes of cooking (it will have to make a light gilded crust) serve the warm gnocchi in the cooking-pot.
