Panettone from Lombardia

 

The Panettone is a cake of ancient origin… the popular tradition says that Panettone means “noble’s bread” (from the French pan de ton bread of “élite”). In reality it sinks its roots into the popular Christmas atmosphere where its name simply meant “big bread”.
It was a special cake only prepared on Christmas time.

 

Panettone recipe:

Flour bread
Sugar
Butter or margarine or oil
Eggs
Water
Salt
Lemon peel, grated
Yeast

At beep add:
Raisins, golden
Fruit, candieds
Nuts, chopped

 

Place ingredients in kettle in order listed, saving the flour dusted fruits and nuts until the beep sounds, 20 minutes into the bread cycle, between the first and second kneading, and drop them in the dough.
Place yeast in receptacle.
Set for Bake (Light) Mode, 4 hours.
